Traditional Christmas menu
To start
Chats with horseradish crème fraîche and salmon roe
Entree
Twice baked goats cheese soufflés with pear, hazelnut and rocket salad
Mains
Roast loin of pork with raisin and walnut seasoning
Celeriac puree
Watercress salad with honey mustard dressing
Dessert
Chocolate pudding with cherries and cranberries in red-wine syrup
To finish
Spiced shortbread stars

 

Christmas menu planner

  • 1 week before: Buy dry goods.
  • 3 days before: Buy fruit, vegetables and dairy. Make spiced shortbread stars. Make the cherries and cranberries in red-wine syrup.
  • 1 day before: Make the cheese soufflés and store in the fridge.
  • On the day: Cook potatoes for the starter. Make the chocolate pudding. Make the stuffing for the pork.
  • 1-2 hours ahead: Toast the hazelnuts for the pear and rocket salad. Make the celeriac puree. Roast the pork and the apples.
  • Last minute: Continue the potatoes with crème fraîche and salmon roe. Continue the cheese soufflés and heat in oven. Dress and assemble pear salad. Dress and assemble watercress salad.
